Yummy Toddler Foods: Chicken Macaroni Soup

This dish certainly requires the toddler to do her job at chewing. Hence, theoretically speaking, she would take a longer time to finish her meal.

The up side of preparing macaroni soup as compared to porridge is the reduced cooking time. *Yay* :P Below is my recipe for whipping chicken macaroni soup for Hannah.

Ingredients

Macaroni – 1.5 tbsp

Skinless chicken thigh – a small piece; trim away any fatty layers with a pair of scissors

Carrot – 1 small stick, peeled: chop half a stick into big chunks; slice thinly (~ 2cm thick) the other half stick

Corn – 1/2 stick, halved

Broccoli – 1 floret, sliced thinly into bite-sizes (any green leafy vegetable is fine too)

Ginger – 1 thick slice, peeled

Garlic – 1 clove, skinned & slightly smashed

Tap water for soup – 200 ml

Light soy sauce – a few drops / pan salt – dash (optional)

Optional: Enoki (golden mushrooms) – 1/3 pack, cut away the bottom half & discard; cut the top half into small portions

Method

1) Bring a small pot containing 200 ml of tap water, chicken thigh, carrot, corn, ginger and garlic to boil.

2) Allow the water to boil for a few minutes.

3) Cover the pot and reduce the heat to a low setting so that the soup simmer very gently for the next 30 minutes.

4) Start cooking the macaroni in a separate pot about 15 minutes before the soup is ready. The amount of lead time is dependent on your macaroni package instructions.

5) Just 5 minutes before the soup is done, add the broccoli slices and Enoki (optional) and cover the pot again.

6) Drain the macaroni and place it in a serving bowl.

7) Once the 30 minutes is up for simmering the soup, remove the chicken thigh, big carrot chunks, corn, ginger and garlic. If your child is above 1 year old, you might want to add 1-2 drops of light soy sauce or a dash of pan salt (this type of salt is less salty) for flavour. The chicken soup itself is quite flavourful without the sauce. Personal preference ya.

8) Pour the rest of the soup into the bowl containing the cooked macaroni.

9) Shred the meat from the chicken thigh and add it to the soup. You might like to slice some of the corn kernels from the cob into the soup as well if your child can handle corn without choking on it.

10) The chicken macaroni soup meal is ready :D
