And I&#8217;m sure it would continue to evolve.<\/p>\n<p>If anybody has tried using lentil for soups, then it is no surprise that the chicken soup recipe which I&#8217;m going to share here doesn&#8217;t require additional seasoning. The lentils make it SO good &#8211; it is that good.<\/p>\n<p>Okay, here we go.<\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Ingredients<\/strong><\/span><\/p>\n<ul>\n<li>Skinless chicken thigh &#8211; 1 piece, fats trimmed with scissors<\/li>\n<li>Fresh corn on cob &#8211; 1\/2 cob, chop into 2 chunks<\/li>\n<li>Carrot &#8211; 1 small stick, peeled, chop 1\/2 of the stick into big chunks and the other 1\/2 slice thinly (~2 mm)<\/li>\n<li>Celery &#8211; 1 stick, chop 2\/3 of the stick into big chunks and the other 1\/3 slice thinly (~2 mm)<\/li>\n<li>Ginger &#8211; 1 slice (~ 3 mm thick), peeled<\/li>\n<li>Organic red lentils &#8211; 1 tbsp<\/li>\n<li>Water &#8211; 250 ml<\/li>\n<\/ul>\n<p><span style=\"text-decoration: underline;\"><strong>Method<\/strong><\/span><\/p>\n<p>1) Place all the ingredients into a small pot and bring to boil.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-15643\" title=\"chicken and lentil soup 1 blog\" src=\"https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2012\/01\/chicken-and-lentil-soup-1-blog.jpg\" alt=\"\" width=\"466\" height=\"375\" srcset=\"https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2012\/01\/chicken-and-lentil-soup-1-blog.jpg 466w, https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2012\/01\/chicken-and-lentil-soup-1-blog-300x241.jpg 300w\" sizes=\"auto, (max-width: 466px) 100vw, 466px\" \/><\/p>\n<p>2) Cover the pot and lower the heat to simmer the soup for 45 mins &#8211; 1 hour.<\/p>\n<figure id=\"attachment_15692\" aria-describedby=\"caption-attachment-15692\" style=\"width: 355px\" class=\"wp-caption aligncenter\"><a href=\"https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2012\/01\/low-fire-for-simmering-soups-1-blog.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-15692\" title=\"low fire for simmering soups 1 blog\" src=\"https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2012\/01\/low-fire-for-simmering-soups-1-blog.jpg\" alt=\"\" width=\"355\" height=\"194\" srcset=\"https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2012\/01\/low-fire-for-simmering-soups-1-blog.jpg 355w, https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2012\/01\/low-fire-for-simmering-soups-1-blog-300x163.jpg 300w\" sizes=\"auto, (max-width: 355px) 100vw, 355px\" \/><\/a><figcaption id=\"caption-attachment-15692\" class=\"wp-caption-text\">The use of low heat (\u8001\u706b) to simmer the soup<\/figcaption><\/figure>\n<p>3) Discard the ginger, big carrot and celery chunks.<\/p>\n<p>4) Remove the chicken thigh\u00a0and shred the meat with a fork. Remove the corn and slice off the kernels. Place the shredded chicken and corn kernels in a serving bowl and set aside.<\/p>\n<p><span style=\"text-decoration: underline;\">Suggestion to make this chicken soup into a one-dish meal:\u00a0Soba Noodles in Chicken Soup<\/span><\/p>\n<p>5) Add dry soba noodles, sliced fresh shiitake mushrooms and green leafy vegetables (e.g. xiao bai cai, cai xin) into the chicken soup and bring it to boil. Lower the heat a little and let it boil gently for 5 minutes.<\/p>\n<p>6) Empty all the contents of the pot into the serving bowl containing the shredded chicken and corn kernels.
