Firstly, after sending darling dearest to work, I hung out at his workplace\u2019s air-conditioned cafeteria to mark assignments from 2 classes. Secondly, I drove to <a href=\"http:\/\/www.streetdirectory.com\/asia_travel\/search\/searchredirect.php?linkid=93459&amp;travel_id=15979&amp;travel_site=84100\" target=\"_blank\">Tampines Mall<\/a> to buy Natasha\u2019s birthday present and buy ingredients for dinner. Thirdly, the house floors were swept and mopped till sparkling clean. Fourthly, I watched 2 episodes of \u2018State of the Planet\u2019 documentary DVD filmed by BBC with my favourite David Attenborough as narrator. Lastly, I tried out a new dish \u2018Chicken Baked Rice\u2019 using a recipe I found on the internet. The last one being most satisfactory as darling dearest went *thumbs up* <img decoding=\"async\" class=\"wp-smiley\" src=\"https:\/\/chekyang.com\/musings\/wp-includes\/images\/smilies\/icon_smile.gif\" alt=\":)\" \/><\/p>\n<p>I\u2019ve always enjoyed Swenson\u2019s baked rice dishes &#8211; they are delicious and often give me the goody warm feeling of being just filled. As it has been sometime since I tried on a new recipe, I thought of being adventurous again. If the cooking turns out yucky, we can always swing by the nearby coffee shop to \u2018ta bao\u2019 (take-away) dinner.<\/p>\n<p>Here\u2019s the online recipe (with my modifications). Pretty easy I\u2019ll say.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone\" src=\"http:\/\/farm4.static.flickr.com\/3028\/2595926721_10103043e4.jpg?v=0\" alt=\"\" width=\"500\" height=\"339\" \/><\/p>\n<p><span style=\"text-decoration: underline;\"><strong>Chicken Baked Rice<\/strong><\/span><\/p>\n<p>INGREDIENTS:<\/p>\n<ul>\n<li>300g chicken breast meat (sliced thinly and then into chunks)<\/li>\n<li>1 can (290g) cream of mushroom soup (Campbell\u2019s)<\/li>\n<li>1 can (290g) fresh milk (use the emptied Campbell\u2019s can for measurement)<\/li>\n<li>1 tray of fresh button or mixed mushrooms (sliced)<\/li>\n<li>3\/4 cup uncooked long-grain white rice (rinsed)<\/li>\n<li>Finely chopped garlic (1 big clove \/ 2 small cloves) or 1\/4 teaspoon garlic powder<\/li>\n<li>1 small onion (cubed)<\/li>\n<li>1 small carrot (cubed)<\/li>\n<li>1 small capsicum (cubed)<\/li>\n<li>1 sachet dry onion soup mix (I used Erin\u2019s cream of vegetable mix)<\/li>\n<li>1\/2 teaspoon dried thyme<\/li>\n<li>A dash of ground black pepper (optional)<\/li>\n<li>5 tablespoons grated Parmesan cheese (quantity variable depending on individual\u2019s preference)<\/li>\n<\/ul>\n<p>PREPARATION:<\/p>\n<ol>\n<li>Preheat oven to 180\u00b0C. Wash chicken breasts and pat dry; set aside.<\/li>\n<li>Combine cream of mushroom soup with fresh milk and stir well to remove lumps. Set aside 1\/2 cup of mixture for later.<\/li>\n<li>Mix remaining soup mixture with chopped garlic, chopped onion, \u00bd pack of the dry onion soup mix and rice. Optional: sprinkle some ground black pepper.<\/li>\n<li>Mix well and pour into a baking dish. (Can be a casserole dish or pyrex glass dish. Mine\u2019s a round, 8\u2033 diameter by 2\u2033 depth pyrex glass dish).<\/li>\n<li>Place carrots and capsicum on rice mixture followed by chicken pieces.<br \/>\nCombine reserved soup mixture with mushrooms. Spread over chicken.<\/li>\n<li>Sprinkle with remaining dry onion soup mix, thyme, and Parmesan cheese.<\/li>\n<li>Cover tightly with aluminium foil and bake in a 180\u00b0C oven for 1 hour.<\/li>\n<li>Remove foil and continue baking for 15 to 20 minutes longer, or until chicken is tender and liquid is absorbed. If the dish still looks watery, you may want to increase temperature to 190 or 200\u00b0C to speed up the evaporation. Do sample from the centre of the dish to check whether rice has soaked up the soup mixture.<\/li>\n<\/ol>\n<p>Serves 4.
