I find myself testing new recipes and revisiting my old favourites.<\/p>\n<p>I&#8217;ve blogged about my <a href=\"https:\/\/www.chekyang.com\/musings\/2007\/05\/09\/blueberry-muffins-at-last\/\">No. 1 muffin<\/a> a few years back. My tummy craved for blueberry muffins this afternoon and I baked them while Hannah was napping away. :) I know that I&#8217;m enjoying life when I have freshly baked, warm muffins to eat. Hannah is now of age to share in this delightful dessert as well. As for Yang, he does not object to having one or two of such muffins even though he dislikes the fruit itself.<\/p>\n<figure id=\"attachment_13861\" aria-describedby=\"caption-attachment-13861\" style=\"width: 500px\" class=\"wp-caption aligncenter\"><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-13861\" title=\"Blueberries Muffin 2\" src=\"https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2011\/06\/Blueberries-Muffin-2.jpg\" alt=\"\" width=\"500\" height=\"375\" srcset=\"https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2011\/06\/Blueberries-Muffin-2.jpg 500w, https:\/\/www.chekyang.com\/musings\/wp-content\/uploads\/2011\/06\/Blueberries-Muffin-2-300x225.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><figcaption id=\"caption-attachment-13861\" class=\"wp-caption-text\">Baked with fresh blueberries<\/figcaption><\/figure>\n<p style=\"text-align: left;\">I have modified the recipe over the years and below is an updated one.<\/p>\n<p><strong><span style=\"text-decoration: underline; color: #003300;\">Ingredients (Makes about 12 small muffins)<\/span><\/strong><\/p>\n<ul>\n<li><span style=\"color: #003300;\">Cake flour (3\/4 cup)<\/span><\/li>\n<li><span style=\"color: #003300;\">Wholemeal flour (1\/4 cup)<\/span><\/li>\n<li><span style=\"color: #003300;\">Baking powder (\u00bd tbsp)<\/span><\/li>\n<li><span style=\"color: #003300;\">Baking soda (\u00bd tsp)<\/span><\/li>\n<li><span style=\"color: #003300;\">Salt (\u00bc tsp)<\/span><\/li>\n<li><span style=\"color: #003300;\">Cinnamon powder (\u00bd tsp)<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li><span style=\"color: #003300;\">Butter (100g, softened)<\/span><\/li>\n<li><span style=\"color: #003300;\">White caster sugar (\u2153 cup)<\/span><\/li>\n<li><span style=\"color: #003300;\">Egg (1 large, room temperature)<\/span><\/li>\n<li><span style=\"color: #003300;\">Plain yoghurt (\u00be cup, room temperature) <\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li><span style=\"color: #003300;\">Blueberries (1 flat tub, rinsed and dab dry with a paper towel)<br \/>\n<\/span><\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><span style=\"text-decoration: underline; color: #003300;\"><strong>Method<\/strong><\/span><\/p>\n<p><span style=\"color: #003300;\">1)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Preheat oven to 190\u00b0C. Line muffin tray with paper muffin liners.<\/span><\/p>\n<p><span style=\"color: #003300;\">2)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 In a large mixing bowl, cream butter and sugar with an electric hand-held mixer until light and fluffy. Beat in the egg.<\/span><\/p>\n<p><span style=\"color: #003300;\">3)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Sift together the flours, salt, baking powder, baking soda and cinnamon powder in another bowl.<\/span><\/p>\n<p><span style=\"color: #003300;\">4)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Add \u00bd of flour mixture and \u00bd of the yoghurt into the butter mixture and use a metal spoon to fold in everything until dry ingredients are JUST moistened. Repeat again after adding the remaining flour mixture and yoghurt. (Important: DO NOT over-fold the mixture.)<\/span><\/p>\n<p><span style=\"color: #003300;\">5)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Gently fold in the blueberries briefly. (the batter should be rather thick and sticky now)<\/span><\/p>\n<p><span style=\"color: #003300;\">6)\u00a0 \u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Spoon blueberry muffin batter into the paper muffin liners, filling about 2\/3 full. \u00a0\u00a0\u00a0(I use another metal spoon to help load the sticky batter into the muffin cups.)<\/span><\/p>\n<p><span style=\"color: #003300;\">7)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Bake at 190\u00b0C for 20-25 minutes, or until tops are lightly browned. (Important: Never open the oven until after \u00be into the baking time. Otherwise, muffins will sink!)<\/span><\/p>\n<p><span style=\"color: #003300;\">8)\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0\u00a0 Take out the muffin tray to cool on a rack for a few minutes; remove blueberry muffins to cool further on the rack.
